Rock and Cydia are third party app store, while if you want to use any other SIM with your iPhone after jailbreaking then you would have to unlock it using sn0w. In other case you can skip installing sn0w if you are using official carrier.

For Third party app store I would suggest you to install both Rock and Cydia.</description>
